Wow. I really dropped the ball on this, huh?
The bad news: it's been a rough few years for me, and the evidence is clear by how I started this blog and promptly abandoned it.
The good news: I'm in a much better place now, and I'm ready (and motivated) to start anew. Hopefully I can drag myself away from Pinterest long enough to write now and then!
So here's the scoop: I have Diabetes. DiaBEEtus, if you're hearing Wilford Brimley in your head right now. I take pills and insulin, and try to eat right. I hate most of the "made for diabetics" options out there, though. All chemical, weird tasting, nasty abominations masquerading as food. I don't want to eat that junk, and I certainly don't want to give it to my family. So what's a Mom to do? Time to get creative.
Right now I have Jax's Apple Pie Oatmeal in the crock pot for tomorrow's breakfast, and I have high hopes! I ran the ingredients through a nutrition calculator, and the answers are promising: 150 calories, 35 carbs, 5g fiber, 4g protein per serving.
My goal here is to chronicle my efforts to lose weight -- and possibly medications -- while maintaining a high standard of deliciousness in my diet. I don't ever want to find myself making two meals (one for me, one for my family), and I don't want to make my hubby and kids feel like they've given up anything in the process. Follow along if you'd like; it's more fun with company.
